Gaia’s nourishing Caesar Salad Bowl is a quick and easy recipe to prepare at home or on the go, to keep you full and feeling healthy all day long. Simply add more ingredients if you wish to cater for the whole family.
Ingredients
- 1 handful of cos lettuce
- 1 steamed potato (skin on or off based on your preference)
- 3-4 white anchovies
- Handful of roasted brussel sprouts
- 1 boiled egg
- 1 celery stalk roughly chopped
- 1 heaped tablespoon of Sauerkraut
- Pickled green tomato
- Toasted rye croutons
- ¼ sliced green apple
- Lemon wedge to squeeze on top
- Small handful of witlof
- Sprinkle of dill to garnish
- 50 grams horseradish
- Macadamia butter
- Apple cider vinegar
Method
- Steam potato to your liking (skin on or off)
- Roast brussel sprouts on 180 degrees until cooked through
- Boil egg to your liking
- Prepare all other fresh ingredients in a large salad bowl and mix through
Horseradish Cream
- Peel and finely slice 50 grams of horseradish.
- Add to a blender and barely cover with water adding a pinch of salt. Blend on high speed for 60 seconds.
- Add 2 heaped tablespoons of macadamia butter and a dash of apple cider vinegar. Blend again for another 60 seconds, adding more water to adjust consistency.
Place sauce on a plate or bowl. Add remaining ingredients, give a squeeze of lemon and serve.
